A rich tasting dairy-free version. Add some vegetables to the pasta cooking pot a few minutes before pasta is done for more color.
Diet Types: Dairy Free, Vegan, Vegetarian
Ingredients:
  • 3 large cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 2 large Spanish onions, sliced thin
  • 1 teaspoon dried basil
  • 1 pound soft tofu, drained
  • 1 package fettucini pasta
  • Serves: 4
    Cooking Time: Under 30 minutes
    Instructions:
    Cook pasta according to package directions. Meanwhile, sauté onion and garlic in olive oil until very soft, about 10 minutes. Add tofu, salt, oregano, basil and continue sautéeing until well mixed and heated through, another 5 minutes. Puree tofu mixture in a blender or food processor until completely smooth, adding water, if necessary, to get a thick, creamy consistency. Toss with hot cooked noodles.
